  • 4 c. leftover stuffing
  • 4 c. chopped skinless leftover turkey (or use rotisserie chicken)
  • 1 1/2 c. coarsely chopped leftover green beans
  • 1 1/2 c. leftover gravy
  • 3 c. leftover mashed potatoes
  • 1 large egg yolk
  • 1 c. shredded monterey jack cheese (about 2 oz.)
  • Cranberry sauce for serving

Method
 

Instructions
  1. Preheat the oven to 425ºF and butter a 9x13-inch baking dish. Crumble the stuffing into the dish and pat it down to form an even crust.
  2. Scatter the turkey and green beans over the stuffing layer, then pour the gravy evenly on top.
  3. In a medium bowl, combine the mashed potatoes and egg yolk, mixing until smooth.
  4. Spread the mashed potato mixture over the turkey layer and sprinkle with the shredded cheese.
  5. Cover with foil and bake for 20 minutes, then uncover and bake for 20 to 25 more minutes until the top is golden brown and crusty. Let the casserole cool for about 10 minutes before serving with cranberry sauce.
