  • 3 lb mixed potatoes such as russets and Yukon Golds, peeled, cut into 1" pieces
  • Kosher salt
  • 1/2 cup whole milk
  • 3/4 cup (1 1/2 sticks) plus 2 Tbsp. unsalted butter
  • 1/2 cup sour cream room temperature
  • Freshly ground black pepper
  • Chopped fresh parsley for serving

Method
 

Preparation
  1. Place cut potatoes in a large pot, cover with water, add salt, and boil for 15-20 minutes until tender.
  2. Drain the potatoes, return them to the pot, and mash until smooth using a masher or ricer.
  3. While potatoes cook, gently heat milk and 3/4 cup butter in a small saucepan until butter melts and the mixture is warm, about 3 minutes.
  4. Pour the warm milk mixture over the mashed potatoes and stir until creamy; then add sour cream, salt, and pepper, stirring to combine.
  5. Transfer the mashed potatoes to a serving bowl, top with the remaining 2 tablespoons of butter, season with more pepper, and garnish with fresh parsley.
