- Place cut potatoes in a large pot, cover with water, add salt, and boil for 15-20 minutes until tender.
- Drain the potatoes, return them to the pot, and mash until smooth using a masher or ricer.
- While potatoes cook, gently heat milk and 3/4 cup butter in a small saucepan until butter melts and the mixture is warm, about 3 minutes.
- Pour the warm milk mixture over the mashed potatoes and stir until creamy; then add sour cream, salt, and pepper, stirring to combine.
- Transfer the mashed potatoes to a serving bowl, top with the remaining 2 tablespoons of butter, season with more pepper, and garnish with fresh parsley.
