- Preheat oven to 350°F (175°C) and line a 9×13 baking pan with parchment paper.
- In a large bowl, whisk together sugars and eggs until smooth.
- Add oil, vanilla, sour cream, and mashed bananas; mix well.
- In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
- Gradually fold dry ingredients into wet mixture until just combined. Do not overmix.
- Pour batter into the prepared pan.
- Bake for 30–35 minutes, until golden and a toothpick comes out clean.
- Let cool completely on a wire rack before frosting.
- Beat cream cheese and butter until smooth and creamy.
- Add vanilla and powdered sugar gradually; beat until fluffy.
- Spread frosting evenly over cooled cake.
- Top with chopped walnuts if desired.
- Slice and serve.

Notes
Use very ripe bananas for best flavor. Don’t overmix the batter. Cool the cake fully before frosting. This cake can also be baked into cupcakes or a Bundt version, and add-ins like chocolate chips or pecans work great too.
