Ingredients
  

  • 2/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 2 large eggs
  • 1/3 cup canola oil or light olive oil
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3 ripe bananas, mashed
  • 1 3/4 cup all-purpose flour, sifted
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 12 oz cream cheese, room temperature
  • 4 tbsp unsalted butter, room temperature
  • 1 tsp vanilla extract
  • 1 1/2 cups powdered sugar
  • 1/4 cup chopped walnuts (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line a 9×13 baking pan with parchment paper.
  2. In a large bowl, whisk together sugars and eggs until smooth.
  3. Add oil, vanilla, sour cream, and mashed bananas; mix well.
  4. In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
  5. Gradually fold dry ingredients into wet mixture until just combined. Do not overmix.
  6. Pour batter into the prepared pan.
  7. Bake for 30–35 minutes, until golden and a toothpick comes out clean.
  8. Let cool completely on a wire rack before frosting.
  9. Beat cream cheese and butter until smooth and creamy.
  10. Add vanilla and powdered sugar gradually; beat until fluffy.
  11. Spread frosting evenly over cooled cake.
  12. Top with chopped walnuts if desired.
  13. Slice and serve.

Notes

Use very ripe bananas for best flavor. Don’t overmix the batter. Cool the cake fully before frosting. This cake can also be baked into cupcakes or a Bundt version, and add-ins like chocolate chips or pecans work great too.
