Cake Batter
  • Unsalted butter or oil at room temperature, for greasing the pan
  • 3 large eggs at room temperature
  • 1 cup light brown sugar (213 grams)
  • 1/4 teaspoon kosher salt
  • 3 Granny Smith apples (about 198 grams or 7 ounces each)
  • 1 cup plus 2 tablespoons white whole-wheat flour (134 grams)

Method
 

Preparation
  1. Preheat oven to 350°F and butter the bottom of an 8-inch springform pan.
  2. In a stand mixer, beat eggs, brown sugar, and salt on medium-high for about 8 minutes until pale and fluffy.
  3. While the egg mixture is beating, peel and cut apples into uniform ½-inch pieces.
Assembly and Baking
  1. Gently fold flour into the egg-sugar mixture until almost incorporated, then fold in the apple pieces and scrape the batter into the prepared pan.
  2. Bake for 75 minutes until browned and a cake tester comes out clean; cool for 30 minutes before loosening and unhinging the pan.
Serving
  1. Serve warm or at room temperature with a dusting of confectioners' sugar and a side of crème fraîche, whipped cream, or Greek yogurt. Best enjoyed the day it's made.
