Preparation
- Preheat oven to 350°F and butter the bottom of an 8-inch springform pan.
- In a stand mixer, beat eggs, brown sugar, and salt on medium-high for about 8 minutes until pale and fluffy.

Assembly and Baking
- Gently fold flour into the egg-sugar mixture until almost incorporated, then fold in the apple pieces and scrape the batter into the prepared pan.
- Bake for 75 minutes until browned and a cake tester comes out clean; cool for 30 minutes before loosening and unhinging the pan.
