Method
 

Healthy Sweet Potato Casserole
  1. Preheat oven to 400°F. Wash and poke sweet potatoes, then bake on a cookie sheet for an hour until soft.
  2. Let potatoes cool, peel them, and mix with butter, vanilla, milk, sugar, and salt in a mixer until smooth.
  3. Spread the sweet potato mixture evenly in a deep baking dish.
  4. In a separate bowl, prepare the crumble mixture by combining all remaining ingredients.
  5. Top the potatoes with the crumble and bake for 35 minutes.
Roasted Sweet Potatoes with Maple Syrup and Cinnamon
  1. Peel and cube sweet potatoes, then place in a mixing bowl.
  2. Toss with olive oil, maple syrup, cinnamon, and salt.
  3. Spread on a baking sheet and roast at 375°F for 20-30 minutes until golden brown.
Mashed Sweet Potatoes
  1. Boil or steam sweet potatoes until soft; an Instant Pot for 30 minutes is recommended.
  2. Mash with vanilla extract, brown sugar, and butter until smooth.
  3. Season with salt and serve warm.
