Sweet Potato Casserole
  • 3 medium sweet potatoes (or 4 to 5 small), about 2 1/2 pounds (see note)
  • cup milk 2%, whole, or evaporated
  • ⅓ to ½ cup packed light or dark brown sugar
  • 2 large eggs
  • 6 tablespoons butter melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
Buttery Pecan Topping
  • ¾ cup packed light brown sugar
  • ½ cup all-purpose flour
  • Pinch salt
  • 6 tablespoons butter melted
  • 1 ¼ cups chopped pecans

Method
 

Preparation
  1. Preheat the oven to 350 degrees F and lightly grease a 9x13-inch baking dish.
  2. Peel and cube sweet potatoes, then boil in water for 12-15 minutes until tender; drain and place in a large bowl.
  3. Lightly mash the sweet potatoes, then add milk, brown sugar, eggs, melted butter, vanilla, and salt, mixing until combined.
  4. Spread the sweet potato mixture evenly into the prepared baking dish.
Topping & Baking
  1. For the topping, whisk together brown sugar, flour, and salt in a medium bowl; add melted butter and mix, then toss with pecans.
  2. Sprinkle the pecan topping over the sweet potato mixture and bake for 25-30 minutes until golden and hot, then serve immediately or keep warm.
