Ingredients
  

  • 1 cup cottage cheese
  • 2 eggs
  • 1 cup cherry tomatoes (halved)
  • 0.5 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp Italian seasoning (optional)
  • 1 tbsp fresh basil or parsley for garnish (optional)

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a small baking dish with olive oil.
  2. In a bowl, whisk together cottage cheese and eggs until well combined.
  3. Fold in cherry tomatoes, salt, pepper, and Italian seasoning if using.
  4. Pour the mixture into the greased dish and top with shredded cheddar cheese.
  5. Bake for 25–30 minutes or until the top is golden and the center is set.
  6. Let cool slightly, garnish with fresh herbs, and serve warm.
